Time to think spring and in honor of Earth Day I’m trying to add in some seasonal recipes for this week’s meal plan. I’m planning to visit our local farm stand to get some fresh salad greens and maybe some rhubarb for a Strawberry-Rhubarb galette. After the stressful events in Boston last week, I feel like we could use some yummy baked goods in the house.
Sunday~ Spinach Quiche. Love breakfast for dinner, especially after spending the day traveling. This meatless dinner was a success!
Monday~ Grilled Chicken Salad with Honey and Chipotle Vinaigrette
Tuesday~ Wildtree freezer meal Italian Pork Chops, Roasted Asparagus
Wednesday~ Meatballs and Pasta (per Madison’s request)
Thursday~ Wildtree freezer meal Bangkok Chicken Satay (grilled) over rice and green beans
Friday~ Pizza night
Saturday~ Away to Gloucester, date night!
